There are no treatments or ‘cures’, however there are some things that I have learned to do to help reduce the side effects and health conditions that come along with it. One of these was: eating gluten free (not being able to eat wheat flour). While many people view being gluten free as a fad diet, to me it has truly helped improve my health and my future.

Of course, my biggest problem with going gluten free at age 13 was that now I had to learn how to live without some of my favorite foods that I’ve eaten for 13 years. Corn dogs, ramen, pasta, garlic bread, cookies, crackers, and so much more.

Luckily, I have been able to find more and more substitutes for these treats throughout the years. When I first went gluten free, gluten free foods were really difficult to come by. However, as the need for gluten free foods grew, so did the companies that provided them. Now it is incredibly easy to find gluten free versions of foods, that taste just as good as the not gluten-free ones!

One thing that I have not been able to find many gluten free varieties of is donuts. That’s why when my mother received a Babycakes donut/cake pop/mini-cupcake maker for Christmas I nearly jumped for joy. We could now 3make our own gluten free donuts!

This cute little treat maker makes 7 donuts in under 3 minutes.

While I’m sure there are other great donut makers and systems to baking home made donuts, this is exactly what worked for us. We looked up some ideas, and got to work.

4 ingredients

  1. 1 cup Trader Joe’s Gluten Free Pumpkin Pancake Mix
    (though I’m sure other pancake mixes will do as well!)
  2. 2 tbsp melted butter
  3. Just under 1/2 cup water
  4. Tiny bit of olive oil (just enough to barely coat the tin)
  5. 1 Egg
  6. 1 1/2 cups powdered sugar
  7. 3 or 4 tbsp milk
  8. 2 tsp vanilla extract

Yeilds: 11-12 donuts              Time: 3 minutes for 7 donuts + about 3 minutes of prep

For the glaze:

  1. Mix the powdered sugar, milk, and vanilla extract together in a bowl.
  2. Stir until glaze is combined.

1For the donuts:

  1. Mix together the pancake batter according to the directions on the box. The only change: Use just under 1/2 of a cup of water, not the amount recommended on the box. This will make it a little bit drier, more donut like and less pancake like.
  2. Set the Babycakes treat maker with the donut tins and turn it on.
  3. Brush a tiny bit of olive oil on the tin to ensure that the donuts come out easily. Wipe away excess oil.
  4. 2Pour the pancake mix into the tin, filling each form to the top.
  5. Close and latch the treat maker.
  6. Let cook for 3 minutes.
  7. Open and remove the donuts. Place on a cooling rack with a paper towel underneath.
  8. After the donuts have cooled a little, about 1 minute, either dunk the donut into the glaze or use a brush to brush the glaze on top of the donut.
  9. Wait for donuts to cool, if desired, and enjoy!

Tip: I personally think that they taste better still warm!
